Acorn Squash and Apple Soup

1. Combine

Combine butter, onion, garlic, celery, and carrot in large saucepan. Cook for 5 minutes.

2. Add

Add squash, apple, and broth. Bring to boil.

3. Simmer

Simmer for 10-20 minutes or until squash is soft. Puree. Add spices to taste.


Yellow Onion, chopped - 1

Celery, chopped - 1 rib

Butter - 1 tablespoon

Acorn Squash, peeled, seeded and chopped - 1

Green Apple, cored and chopped - 1

Broth, chicken or vegetable - 3 cups

Nutmeg, Cinnamon, Salt and Pepper - pinch
