1. Cut beets in 1/4” thick slices and lay out on baking sheet. Roast in a 425°F (218°C) oven for 10 – 20 minutes, until tender. Remove beets from oven, allow to cool, and peel.

2. Mix Fresh Tzatziki and goat cheese in a mixing bowl until well combined.

3. Arrange beet slices on a serving dish. Top each slice with a dollop of Tzatziki & goat cheese mixture. Sprinkle each with chopped pistachios and chopped dill. Makes about 20 to 24 slices – Enjoy!
