Ingredients
- 1 ½ cups of milk (whole)
- 3 eggs (large)
- 1 tbsp of sugar
- 1 tsp of salt
- 1 tsp of vanilla
- ¼ cup of brandy (optional)
- 1 cup of plain flour
- 3 tbsp of butter (melted)
- 3 cups of wild berries (fresh/frozen)
- 1 tbsp of lemon juice
- 1 tbsp of sugar
- Powdered sugar for serving (optional)
Directions
- Mix the eggs, sugar, and salt at high speed in a blender for roughly 10 seconds. Once frothy, turn down to low speed and add the melted butter, brandy, and vanilla and blend for 10 more seconds. Add all the flour and blend until smooth and mixed.
- Over medium to high heat place your pan and melt butter, then pour batter just enough to cover the pan’s surface. Tilt the pan in a circular motion to spread the batter across the surface evenly.
- Cook until bubbles form after around 1 or 2 minutes and then lift the edge to see the progress underneath, and if it’s burning – adjust the heat until the bubbles appear and that traditional soft brown glaze forms. Keep cooking until the batter is done!
- For the compote, place the berries in a small saucepan over moderate heat and gently simmer for about 4 minutes while mashing the berries to form into a paste. Pour the lemon and sugar, stirring well, then remove from the heat.
